I happen to live 10 minutes from Mystic. I'm no Mystic expert, as we've only lived here for four years, but I'll share a little of what I know.

I have to say the timing of your trip is unfortunately a tad early, as Mystic really comes alive in the warm months. Please don't take that negatively, I just want to be honest. (I'm also disappointed that I won't be able to recommend our family's favorite restaurant in mystic as they don't open till April 3rd. It's a great summertime fried sea food, French fries, hot dogs and ice cream type of place.)

Ok, enough with the things you can't do in Mystic. :o

Mystic is really nice year round. As far as walking around and doing window shopping type stuff there are two main choices, the Main Downtown Area and Old Mystic Village. The Downtown place that stands out is Mystic Pizza (for obvious reasons). If you are up for lunch/dinner and drinks, a couple of our favs are Margaritas and The Voodoo Grill. (note, Mystic is predictably big for seafood too, but I'm not a good resource for seafood places. Did I mention that the Sea Swirl has great hot dogs. ;))

Notice that I only recommended restaurants. The enjoyment of the downtown area is discovering the little shops, boutiques and book shops. My best advice is to not only walk the main strip, but keep an eye on the smaller side avenues, as there are plenty of small places to discover.

Old Mystic Village is right next to the aquarium, and you would have to have your eyeballs ripped out to miss it. :) Your girlfriend will enjoy hitting the cute unique little shops. You'll be thinking "how does this place survive without a big box anchor store?" This type of thinking will lead to day dreaming about picking up a video game at Best Buy when you get home, and you won't even notice the stuffy argyle sweater your girlfriend just bought you. :D

Back to food,... the Steak Loft restaurant is right at the front side of Old Mystic Village, opposite the aquarium. Good food and drinks. Check out the bar, it's pretty cool and has good bar food to boot.

If you want to take a short ride Stonington Borough is another quaint village with shops, and is sort of an off the beat hidden gem. If you do visit Stonington Borough make sure to travel straight through all the way out to the point, as you'll be rewarded with a great scenic view of Atlantic. (And if you do get to the point, be sure to look left and wave. I live in Westerly RI, due east just a bit inland off the coast line you'll see. :))

If you're done with "quaint," the are two big Casinos nearby, Foxwoods and Mohegan Sun that provide plenty of entertainment.

How about a guy's type of activity you say! Try Submarine Force Museum in Groton.

And I would be remiss to not mention the best place that is unique to our area. A food place of course. An Ice Cream stand to be precise. Buttonwood Farm

I'm not going to lie, Buttonwoods is about 35 minutes outside of Mystic, and is in a rural area, but the Ice Cream is sooooooo fucking worth it! If you did take a drive to Foxwoods you'd be heading in the direction of Buttonwoods too.

That's all I've got. Good luck. And if you find something worth mentioning that I didn't mention, share it with us when you get back to a computer. I just might learn something new about our area. :)
