Rob B Posted January 31, 2005 Report Share Posted January 31, 2005 Week 5 Bobbio?s Taco Hot-dish Supreme Ingredients: 2 Lbs Hamburger 1 1/4 Cup Cooked rice ? I?m Lazy I use Instant 1 Can whole Tomatoes drained ? save the juice ? can black olives 1 can refried beans Tostitos chips 2 cups shredded cheese 1 package of taco seasoning 1 package of Fajita seasoning I started with two frozen pounds of hamburger in tubes. I cut these in half across the with and then each half I cut length wise with the flat part on the cutting board. Why did I do this? So they would fit into the feed tube of the food processor and used the shred blade. Not only does this help speed up the cooking process, if starting from a frozen state, it gives you uniform chunks :tu Ok on to the recipe: Preheat oven to 400 degrees Cook up the meat and in some kosher salt chives and a bit of garlic granulars cook until brown. Mid way thought the browning cut up the black olives and tomatoes and them to the meat. Go head and get the refried beans cooking on low at this time too. Remember to stir so it don?t burn. Drain meat when its all brown and cooked Now mix up the two packets of the seasons in to that juice from the drained tomatoes should be about two cups worth of juice. Stir this into the meat and fallow directions on seasoning pack. DON?T use WATER you?ll get more flavor wroth the tomato water/juice After the mixture as simmered for about 5 mins and in the cooked rice and the refried beans mix this well. Now lay out a layer of the chips on the bottom of a casserole dish? Carefully place on layer of the meat mixture on top of the chips, carefully so they don?t slide out and a layer of cheese to the top of the meat mixture?? Then another layer of chips meat cheese followed by a chip crumb top Place in the 400 degree oven for 25 mins pull out and let rest 5- 10 mins. reeldeal Posted February 6, 2005 Report Share Posted February 6, 2005 just made this up tonight as my parents were visiting for the weekend. it was a huge hit, the only problem was that we all ate too much and it seemed to expand in our stomachs. it's been 4hrs since we ate but we're all too stuffed to get to dessert! good stuff bobbio! just as an aside we did all the prep short of baking it and then stepped out for a couple hours and came back and threw it in the oven.
